Yellow Springs Farm’s Annual Honey Harvest

Every year, Yellow Springs Farm (located in picturesque Chester Springs) and founders Catherine and Al Renzi welcome the public to join in their annual honey harvest. “Our bees have been working hard for us even in this steamy, summer weather,” say the Renzis.  “Here at the farm, we sell local, raw wildflower honey. It is light and fragrant. We don’t cook it or use any additives.”  The honey, sold in 8oz and 16oz jars is available for $5 and $10, respectively.  They caution, however, that their honey always sells out quickly, so order early. Reserve now online or call Yellow Springs Farm at 610-827-2014.

With such a wealth of diverse plants on the farm, the Yellow Springs’ bees have an amazing variety of wildflowers that give every year’s honey crop its unique flavoring.  Historically, honey color and flavor are determined by the various plant species visited by the bees. The native plants grown on the farm provide an important source of nectar for the bees.  Currently, Yellow Springs Farm sells wildflower raw honey.

To purchase the honey, you can visit the farm (check out the hives or even take a Tour of the Farm), buy the honey online, or head to one of the local farmers’ markets including Great Valley Farmers Market (at Penn State Great Valley on Swedesford Rd., Thursdays: 11am– 2pm) or Anselma Mill Market (on Rt. 401 in Chester Springs, Wednesdays: 1-6 pm).  Also of note: Some of Yellow Springs Farm’s unique goat milk cheeses also contain the seasonal farm fresh raw honey.  Honey will be for sale at the farm during the month of August, and also at the farm’s Annual Native Plant Sale taking place September 10-12.

Yellow Springs Farm and nursery, which sits on 8 acres of some of Chester County’s most beautiful farmland, consists of a beautiful, historic farmhouse, dairy barn, a springhouse with pond. Orginally a dairy farm 150 years ago, the owners now focus on conservation landscaping for the benefit of our water, air and environment. Their mission is to promote land stewardship through the propagation of native plants of the Northeast and Midatlantic area and use only organic fertilizers and sustainable farm practices.  Yellow Springs Farm also produces fresh and aged goat-milk cheeses, derived from the farm’s dairy goat herd.  Many of the artisanal goat milk cheeses incorporate herbs, nuts, and honey produced on the farm. All of Yellow Springs’ cheeses are handmade in small batches, and include nothing artificial.
