Paramour Bar and Restaurant to Open This Fall in Iconic Wayne Hotel

Come this fall, Paramour, a sophisticated bar and restaurant serving modern American cuisine, will open in the iconic Wayne Hotel, found at 139 East Lancaster Avenue.

With a picturesque atmosphere and an affordable menu of seasonally-inspired dishes, Paramour is sure to become a new favorite for dinner and drinks for all Main Line dwellers (plus, those not-so-near).

“This will be the perfect place for a special-occasion meal, but also a fun spot for a cocktail or a glass of wine and a quick bite.  Paramour is all about a great experience,” says Michael Giampa, Director of Restaurant Development for S.W. Bajus Ltd., owner of the Wayne Hotel since 1985.

The Wayne Hotel recently completed an extensive two-year renovation, including an expansion of the original restaurant space. Located in the heart of downtown Wayne, Paramour will offer four areas for guests to dine, grab a light bite or have drinks with friends:

  • the outdoor veranda (a gardenlike setting with mocha-colored rattan chairs and couches)
  • a contemporary lobby lounge (expect high-backed cream leather chairs, ottomans and a working fireplace)
  • a lively bistro bar (seen boasting with plush semi-circle banquettes)
  • a main dining room with direct views of the chef’s bar and open kitchen

We are already marveling over the anticipated menu at Paramour, which will feature top-notch cuisine executed by Chef Maurice Kim deRamus. A graduate of the Culinary Institute of America, Chef Kim deRamus is classically trained, with over 15 years experience working in some of the area’s top kitchens including, most recently, as Executive Chef at A La Maison Bistro in Ardmore, PA.

In the bistro bar—with a design that features dark floors contrasted by white walls, floor-to-ceiling windows with sheer curtains, a custom-designed silk and crystal chandeliers—you’ll spot a striking bar (made from exotic Wenge wood and a granite top) that will offer a notable beverage selection with a focus on wines and craft beers from the United States.

Plus, there will be a list of creative, handcrafted cocktails that you will most definitely have to sip:

  • Lemon Basil Mojito
  • Salted Plum Martini
  • Pineapple Pisco Fizz

The design of the main dining room features a bay of windows, a geometric patterned carpet, cream marble floors and a glass-walled wine display. A black granite chef’s bar will showcase the day’s raw bar and crudo offerings, and will be a prized “dinner and a show” seat for up to eight guests. Dinner items will include:

  • Crudo Sampler
  •  Salt Cured Lancaster Beef (seen to right)
  •  Pork Cheeks
  • Shaved Root Vegetable Salad
  • Charred Himachi Collar
  • Chestnut Ravioli

We also love the idea of their proposed offering a “Primal Cuts” section featuring local beef, Berkshire pork and Colorado lamb with steakhouse inspired side dishes, as well as the “Fresh Catch” option of a whole-baked fish, encrusted in salt, that will be filleted table-side. Menu will price from $9 to $38.

An alluring all-day menu will be available in the bistro bar, lobby lounge and on the veranda, from 11:30 a.m. to midnight, seven days a week.

Guests may choose from a variety of dishes, including small plates, entree salads, burgers and sandwiches like Kobe Beef Sliders (seen right) and made-to-order flatbreads including Salumi and Ricotta Salata. Plus, there will be a selection of “Bar Bites” including Crispy Chicken Oysters with creamy cilantro dipping sauce;  Devils on Horseback, Medjool dates stuffed with gorgonzola and Lancaster bacon;  and Lola Duck Meatballs with Korean Hot and Sour sauce. Prices will range from $5 to $18.

The Wayne Hotel, which opened in 1906, is listed in the National Register of Historic Places. Local entrepreneur Stephen W. Bajus purchased the property over 25 years ago and now, after a complete refurbishment, the hotel has been re-invented to offer accommodations with amenities expected by the modern traveler.

Apart from its notable new restaurant, the Wayne Hotel offers a private room for dining and meetings, 40 inviting guest rooms including two luxury suites and 12 off-site luxury furnished apartments for longer term stays.  For more information on the hotel, or to book a room, visit www.waynehotel.com.
