Sips Bistro and Bar Opens July 20 in Phoenixville

The newest restaurant to hit Phoenixville has almost debuted while flying under the radar – that is, almost.

Sips Bistro & Bar will open tomorrow, July 20, at 400 Bridge Street in Phoenixville, where The Chester Hotel reigned in the old days (see photo below from Phoenixville Historical Society). Stroll on in to the former home of the Moon Saloon after 4:30 pm tomorrow and you won’t be greeted by an interior decorator or a construction crew – but, a friendly staff instead. While they plan to offer premium craft beer and hand-crafted cocktails in the near future, the liquor license is in the works so SIPS will operate as a BYOB until further notice.

The owner, Fabien Chaigneau, is originally from Pays de la Loire, France, and intends on bringing that background into his cuisine. He’ll do so by providing a fine European bistro dining experience but at a lower cost than you might expect after frequenting the elite restaurants in the area.The multi-lingual chef should have no problem delivering on his fine dining promise since his culinary history weaves from a Hotel Casa Coco in the Dominican Republic to Sofitel Hotel and Georges Perrier’s Brasserie Perrier.

Our friends at OneNineFourSixZero recently sat down with the owner of this soon to be hot spot in Phoenixville, PA and got the scoop on his tempting menu options which include mostly traditional French cuisine. Fabien’s kitchen will dish out  Soupe a l’onion with Gruyere cheese, Pate de Campagne, Planche de Charcuterie, and Planche de Fromage as hors d’oeuvres. Plus, you’ll find “Fruits de Mer” at the restaurant we think most will recognize as a breath of fresh air in Phoenixville. The “Fruits de Mer” will feature oysters, shrimp, clams, and “Le Plateau” (crab legs, oysters, clams, shrimp).

Salads, a wide variety of Tartines, and main courses like Salmon and Mussels Marinieres are also up for grabs as of tomorrow, as well. Although the full service bar is not yet operational, Fabien’s Specialty Cocktail Menu will certainly draw a crowd when the time is right. With options that range from an Espresso Martini to Lychee Strawberry Bellini and Spiced Pear, we wouldn’t be a surprised if a line has already started. If so, you’ll see us toward the front, ready to dive in taste buds first!
