Roots Cafe to Expand to Former Gilmore’s Restaurant Space

Gilmores, ExteriorThe former home to Gilmore’s Restaurant will not be vacant for much longer.

This morning, Roots Cafe‘s owner/chef Dan Celluci announced the details of his expansion project. He will officially be taking over the East Gay Street space that touts an acclaimed past. Celluci will be relocating from his current West Gay Street nook to the much more spacious restaurant situated on the same block as Doc Magrogan’s and i-Pasta. With the move, he hopes to expand Roots Cafe so he can eventually feature  dinner service in the bigger space, while continuing with his sustainable-focused, organic-heavy  “food project” that makes regular use of local purveyors like Lancaster Farm Fresh Co-op and Thornbury Farm.

The new Roots Cafe is targeted to open date at the end of May 2013. The new location will continue to serve his highly-regarded, ever-changing breakfast and lunch menus, while debuting his new seasonal farm-to-table dinner menu. Outback garden seating is also in the works.

Roots Cafe is currently asking for you to visit their current location (at 8 West Gay Street; next to Starbucks) to fill out a small questionnaire and pass along feedback regarding the upcoming changes.
