PA Eats’s EIC, Amy Strauss, recently sat down with the talented duo behind Exton’s newest dining concept, Forage American Brasserie. Formerly Vella Grill, this new mod-American BYOB features locally sourced, high quality creations served at affordable prices.

Vella’s owner Derrick Wheeler teamed up with restaurateur and chef, Ralph Fernandez, to create this innovative menu. “Everyone is chained out in the suburbs, but they don’t need to go to the city,” said Fernandez. “We care what people put in their bodies. We’re using high quality ingredients and producing honest food.”

Our foodie insider started her menu tour with organic white cheddar popcorn (tossed with brown butter and chive blossoms) before indulging in Hawaiian Ahi tuna tartare (wasabi avocado base, yellow fin tuna and a citrus soy vin) and finally, taking her decidedly favorite bite of duck confit-topped cracked grain salad.
