Meet the First—and Only—Mustard Sommelier

Maille, one of France’s most respected brands, recently opened a mustard boutique in New York City. Yes, mustard. Similarly to its shops in Paris, London and Dijon, the Big Apple outpost carries more than 20 mustard flavors in jars (with more to come!) and also pours mustard, by hand, into stoneware jars as large as 18.6 ounces. If 20 varieties of mustard sound like a lot, keep in mind that the European stores carry 40.

The woman at the helm of this spicy shop is Pierette Huttner, whose title as Mustard Sommelier began with her studies at each Maille boutique in Europe before she came to the states to lead customers through tastings of both the jarred and on-tap offerings, which include flavors like Parmesan and basil, fig and coriander and sun-dried tomato and Espelette pepper. Pricing for on-tap mustards range from $25 for 4.4-ounce jars to $99 for the 18.6-ounce jar of the ultra-limited holiday flavor, Chablis wine and black truffle.
