The history of the classic cocktail begins at Bar Casoni in Florence, where Count Camillo Negroni ordered an Americano—sweet vermouth, Campari and club soda—with gin swapped in for the standard soda. Davio’s is taking the traditional Italian version and mixing it up with an array of modern spinoffs that includes a taste for every palate:
