Chaddsford Winery Sunset Blush Wine-Infused Cocktails

We’re thankful that the thermometer has finally registered fully on summer—time to celebrate with a fruity and fresh cocktail (or two)!

Chaddsford Winery’s Sunset Blush is a delicate pale pink, slightly sweet rosé wine that tastes great on its own, but it’s even better in a cocktail. Pick up a bottle or two, grab your cocktail shaker and get ready to enjoy these inventive and fun drinks.

Sunset Blush Cocktail

Chaddsford Winery Sunset Blush cocktail

Ingredients

  • 1 egg white
  • 5 ounces Sunset Blush Wine
  • 1 ounce gin
  • 2 sprigs thyme

Method

  1. In a cocktail shaker, combine the egg white, Sunset Blush Wine, gin and one sprig of thyme. Place the lid on the shaker, and shake for about 2 minutes or until the egg white is frothy and thick.
  2. Add a half cup of ice to the shaker, and shake for another minute. Strain the cocktail with a fine strainer, and pour into a wine or coupe glass. Garnish with remaining sprig of thyme and serve.

Sunset Blush Summer Mint Cocktail

Chaddsford Winery Sunset Blush with Mint cocktail

Ingredients

  • 2 cups heavy cream
  • 6 sprigs mint
  • 1 bottle Chaddsford Sunset Blush
  • 2 cups sparkling cider

Method

  1. Chill the bowl of a stand mixer in the freezer.
  2. Heat a pot over low heat. Add the heavy cream and mint. Simmer the mint in the cream over very low heat for about 30 minutes. Once the cream tastes like mint, remove it from the heat and allow to cool completely.
  3. Pour the cooled cream into the bowl and whip until medium peaks form.
  4. Pour the Sunset Blush into four glasses and top with the sparkling cider.
  5. Garnish the glass with a dollop of mint cream.
