Everyone needs a little Tryst now and then, right? Black Walnut Winery and the Tasting Room announce the release of the 2012 Tryst on Wednesday, November 23. At $23 a bottle, this light to medium-body blend of Pinot Noir and Merlot will be available for the first time at both locations and is sure to be a best seller. Tryst shows aromas of dark cherries with flavors of pomegranate and cranberry, while the tannic structure leads to a medium finish, drinks well now and also has the potential for more depth during aging. Pair this vixen vintage with cheddars, creamy cheeses and rich soups.

5 Reasons to Have Port Wine on Your List

Black Walnut Winery is giving you even more ways to cross special folks off of your holiday gift list with two exquisitely produced port-style wines:

Deception is a favored white port-style wine that showcases Vidal Blanc grapes blended with locally distilled Syrah brandy. It features aromas of mango, citrus and honey crisp apple with a touch of vanilla. The flavor and body are rich, displaying peach and honeydew melon with a bright nectarine finish.

Seduction is a sexy red port-style wine that shows a wonderful sweet black cherry aroma with a hint of molasses. This Merlot-based wine was first aged with both French and American oak, then fortified with Syrah brandy from Black Walnut’s own cellar and finally, aged in bourbon barrels. The result is a very complex and structured wine. This wine starts with sweet cherry flavors, moves to softer vanilla and bourbon tastes and finishes with a very soft and smooth feel that lasts and lasts.

Here are 5 easy ways to incorporate these premier port wines into your holiday gatherings:

1. Drink as an aperitif.

White ports are excellent served chilled on their own or accompanied with a plate of olives, pine nuts or roasted almonds.

Pairing ports with cheese is one of the best gastronomic associations ever. Most port wines are an excellent buy to accompany a cheese selection like most rich, soft cheeses, including blue-veined varieties like Gorgonzola or Stilton. The most successful chocolate pairings involve dark chocolate or truffles with a high cocoa content.

3. Pour it after a meal.

Port comes into its own at the end of the meal, and red port can be enjoyed as an after-dinner drink. Port is one of the most sociable of all wines. Its rich and intense flavors make it the perfect finish to any meal, whether formal or relaxed.

4. Use in recipes.

Port is useful in cooking because of its strong, fruity flavors and sweetness. It’s a natural pick-me-up for game dishes, but adding a slug of port to the juices of roasting beef or lamb works, too. Consider creating flavored dimension to sauces with ports as well.

5. The perfect hostess gift.

Port wines tucked into a festively decorated bag with a box of chocolates or handmade wine charms (Black Walnut has it all in the on-site gift shop) make giving gifts to friends, family or a favorite coworker the best part of the holiday season.
