Greek-Inspired Food Truck Fare Comes to the City of Brotherly Love

The warmer weather has hit, and it’s natural for the mind to start to wander to exotic destinations, islands surrounded by the glistening sea and oceanside tables abundant with local fare. Now locals can travel to Greece and the Mediterranean through their tastebuds at the Phyllodelphia food truck, run by husband-and-wife duo Greg and Terry Daglis.

Greg grew up in a Greek family who owned a diner—not just any diner, but one of the landmark restaurants in the area: Crestwood Diner in Wildwood Crest, New Jersey. The kitchen was always a familiar place to Greg. He started working at the diner at a young age, then ran the kitchen and ultimately moved to the front of the house. Greg always loved cooking and being part of the restaurant that brought his family together.

Eventually Greg left the family business to work in finance for 15 years, but his love for cooking never diminished. His wife, Terry, also loves to cook and they both enjoy being in the kitchen with their 12-year-old son and entertaining at home with friends.

As time went on, Greg and Terry started toying with the idea of starting their own business. Greg knew he didn’t want to open a traditional brick and mortar restaurant—he wanted something different. Phyllodelphia, a gourmet-style food truck, was born.

When they first started the food truck business, Greg and Terry specialized in traditional Greek recipes, namely “pitas,” the Green word for pie. Greg’s mother taught him the recipes, transcribing her word-of-mouth techniques and estimated measurements bit by bit until he was able to replicate her dishes into something the whole family was proud of.

A classic on the Phyllodelphia menu is the Spanakopita, little individual triangles of flaky phyllo dough stuffed with spinach and creamy cheese. For something sweet, try the baklava, a symphony of flaky and chewy layers of walnuts and sweet syrup. Eventually, Greg and Terry took the phyllo dishes they knew and loved and were inspired to create their own unique pitas, including an Italian sausage and cheese pita and a buffalo chicken pita with Danish blue cheese. They also took other signature Mediterranean recipes, like Greg’s father’s lamb meatball recipe, which was adapted into a lamb meatball slider for the truck. For meat lovers, Phyllodelphia offers a Greek-style lollipop lamb chop, charred on the flame broiler to melt-in-your-mouth perfection and served with refreshing cucumber tzatziki.

Soon, Greg and Terry will be expanding their menu to offer Lebanese-style meat pies as well as traditional Greek salad with ripe tomato, cucumber, onion, kalamata olives, pepperoncini, the highest-quality feta cheese and an explosively herbaceous vinaigrette. For a seasonal twist come fall, they plan to offer a pumpkin phyllo pie. There’s always a new and exciting dish to try at the truck.
